Blueberry Crumb Bars Recipe
(Adapted from AllRecipes)
Ingredients:
- 1 cup sugar (plus extra 1/4 to 1/3 cup for blueberries)
- 1 tsp. baking powder
- 3 cups all-purpose flour
- 1 cup unsalted butter
- 1 egg (you can use 2 to 4 for a less crumbly version)
- 1 tsp. vanilla extract
- 1/4 to 1/2 tsp. salt
- zest of one lemon
- 4 cups fresh blueberries
- 3 Tbsp. cornstarch
Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.
In a medium bowl, stir together 1 cup sugar, 3 cups flour, salt, lemon zest, and baking powder. Blend in the butter, egg and vanilla. Dough will be thick to crumbly. (I often add a touch of add water to make it smoother)
Half to 2/3 of the of dough goes into the prepared pan.
In another bowl, stir together the sugar and cornstarch. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.
No fresh berries? You can make this with Canned Fruit!
1 c. butter
1 3/4 c. sugar
4 eggs
1 tsp. vanilla
3 c. flour
1/4 tsp. salt
1 1/2 tsp. baking powder
1 can cherry pie filling OR blueberry pie filling

Cream first 2 ingredients.
Add eggs; beat well.
Add vanilla.
Sift dry ingredients; mix well into batter.
Put 2/3 into bottom of greased 9x13-inch pan.
Spread cherry OR blueberry filling.
Drip remaining batter over the fruit.
Bake 40 to 50 minutes at 350 degrees.

Optional: When slightly cool, drip with powdered sugar icing.

Even better the second day. It usually needs to bake almost an hour. Buttery and moist.
